Open Face Veggie Sandwiches:
-4 hoagie buns or one loaf of french or asiago cheese bread(this one was 3 lbs, I riped out a lot of the inside)
-1 zucchini
-1 squash
-1 green pepper and 1 red peppers
-1 onion
-mushrooms(if you like, I don't)
-and other veggies you like
-2 tomatoes
-container of garden veggie cream cheese
-mozzarella cheese (or your favorite)
Start out with your bread, cut it open but leave still attached, if you use a loaf its best to rip out some of the inside. Broil for a minute or so on one side, then flip and spread the inside with a bit of butter and put under the broiler for a few minutes. Watch carefully. It will burn quickly, you just want to get it toasty.
Then cut up all your veggies, for one loaf I used 1 of each:squash, zucchini, onion, red pepper, and green pepper. Place on your George or other grill and drizzle with a little olive oil. Cook until done, grill marks, and soft.
Take your bread out of the broiler and spread with the Garden Veggie Cream cheese, this loaf used the whole container. Then place all your veggies on it evenly over the bread.
If you choose to do hoagies, cut them open but leave the two sides still attached or the veggies won't stay on.
Then sprinkle with Parmesan cheese and Mozzarella, we found that to be the best cheese, I like lots. Place under the broiler just until cheese is melted.
Doesn't it look good?
I want to eat one right now.
