Sweet Potatoes

I have to say one of my favorites things to eat are sweet potatoes, and did you know they are probably one of the healthiest things you could eat? In 1992, the Center for Science in the Public Interest compared the nutritional value of sweet potatoes to other vegetables. Considering fiber content, complex carbohydrates, protein, vitamins A and C, iron, and calcium, the sweet potato ranked highest in nutritional value. I love when things I love to eat are good for me too. One of our families favorite ways to eat them is like a french fry. My hubby who does not like Sweet potatoes loves my new recipe for them. They are so dang good. And now that its Spring I love to cook them on the grill. Also, my sister reminded me that we love to put them in place of potatoes in our hobo dinners: hamburger, sweet potatoes, onions, carrots, yum.
I love to put cinnamon, paprika, salt and olive oil in a bag, put the potatoes inside and shake, then place on the grill or in the oven. Also instead of cutting them like french fries which takes forever, I just slice them about 1/2 inch thick.

I did find a recipe for those of you that like to follow directions. But when I made it up, or so I thought, I just pour in the about 1/4 cup olive oil, and then shake a lot of paprika, a lot of cinnamon, and a bit of salt. You can't go wrong. The mix of the cinnamon and paprika is so dang good. Enjoy.


1 - 1 1/2 lb sweet potatoes

1/4 cup olive oil

1/2 tsp salt

1/2 tsp paprika

1/4 tsp cinnamon
Preheat oven to 425 degrees. Line a baking sheet with aluminum foil (preferably the easy release kind).
Peal the sweet potatoes. Cut into strips that are about 1/2 inch wide on each side.
Place the sweet potatoes into a sealable plastic bag. Add oil, salt, paprika and cinnamon. Seal the bag and shake well to thoroughly coat the fries. Spread the potatoes out onto the baking sheet in a single layer.
Cook for 30 minutes, turning every 10 minutes. Transfer immediately to a paper towel lined plate and serve warm.

mmmm so tasty. I'd have to say they're my favorite too. I crave going to steakhouses JUST for the sweet potato~ I don't want anything else really. I love twice-baking them and throwing some nuts and raisins on top.

Sounds Good. I am going to have to look for those frozen sweet potato fries at Costco. I have a really good recipe for sweet potato yeast bread. Now you have made me hungry.
