Flatbread Fish Tacos

 

 My family, especially Trent loves going to Rubios or Bajios to get Fish tacos. So I thought I'd try making my own. I messed around with a few sauce recipes to come up with this one. Some call for adding a bit of cumin and cayanne but we like this blander version. The flatbread makes these fish tacos. And getting high quality fish and baking them makes them soo good and so much more healthy.
We've also used the "flatbread" for regular tacos using turkey burger and black beans with a ranch sauce.  I bet they'd be good with eggs, bacon and cheese or even for a pizza.  The ideas are endless.


Flatbread Fish Tacos:
  • 1 can Jumbo Buttermilk Biscuits( to make flatbread AMAZING!!!)
    • Frozen Fish Sticks (I buy the gourmet kind at costco, 100% Pollock or cod. The ones I currently have are called, "the ultimate fish stick" and come in a black bag.  To die for seriously and have no preservatives, no artificial ingredients 100% natural and soo good. A bit more costly than the cheap stuff but worth it and so much healthier for you and you get 60 in one bag so its actually a great deal. I figure if my kids like fish sticks I might as well spend a bit more and get the good stuff so we will eat them to. Costco also has breaded halibut and mahi mahi which work great too.)
    • 1 bag pre-shredded cabbage
    • 1/2 cup plain yogurt
    • 1/2 cup lite mayo
    • 1 lime, juiced
    • 1 tsp. Dill
    • pico de Gallo

    1-Bake your fish according to the bag.  I use 2 sticks per taco, but if you get the breaded halibut or mahi mahi, usually just one, so make accordingly.
    2-while the fish is baking, open up the can of biscuits and roll each out until super flat about 6-8 inches. Place in a dry skillet or pan on med heat and cook until browned on both sides about 2-3 min. Then place in foil while cooking the rest to keep warm. One can makes 8 flatbreads.
    3-sauce-mix your yogurt, mayo, lime, and dill and chill for 10-15 min.

    To serve, spread each flatbread with the white sauce, then place 1-2 fish, top with cabbage and then pico de gallo. Enjoy. Soo good. Trent can't wait to have them again. We invited my empty-nest parents over for this and they loved it.

    YUM! I am totally trying this recipe, I LOVE fish tacos i seriously could eat them everyday, we have fish sticks but i don't think they are as healthy as the ones you have, i might have to get some next time we're in town but i'm definitely trying this recipe mmmmm can't wait!

    I don't like fish but those look good! I may have to try making the flatbread, that is a great idea!

    Sounds yummy. We love fish tacos at our house too. I am going to try the biscuit thing.
